Have been bringing Uncle William and his wife around Singapore for every 1 or 2 days since last Sunday.
Went to airport terminal 1 to bid farewell at 4.30pm just now. Felt really sad and reluctant to see them leave, especially when he talked to me and we shook hands. Was trying very hard to hold back my tears. I don't even know if he'll be visiting us in Singapore again, since most things are expensive here compared to China.

Had so much fun with him for the past few days. Felt like as if I've known him for a long time, when this is only the 2nd time I've meet him. The first time was when I went to China with daddy during Christmas period, when I was still in Secondary school. They were the ones who brought us everywhere.

He encouraged us to move on, and not be bothered by some filthy and rich assholes anymore. He said sth like “过去的就放下了。你们一定要好好地活下去。让他们看到你还是可以一样过的很好。虽然没有钱，但是有幸福美满的家庭。全家人快快乐乐在一起。虽然刚开始很艰难，但是这一切都一定会熬过去的。”

Just now he told me to always remind daddy, “一定要有自信！加油！”He said if there's anything, I can call him and if needed, I'll give him 3 days to fly to Singapore. :') Everything that he said to me / us, has a very strong impact on me. When he encouraged or talked, it made me feel like I must listen to him obdiently. His simple words gave me a lot of strength to move on, and to persevere. For example, yesterday while we're having buffet dinner at Park Royal Hotel @ Kitchener Road, because he knows that I want to be a songwriter, he kept encouraging me to work hard towards my dream. I'm always so moved by his words. From then on, I promise myself that I'll make sure I don't give up, and continue persevering, and continue working really really really hard to make my dreams come true. I'll make sure that I succeed, and I'll share the good news with him. I'm waiting patiently for this day to come. I can do it!

一定要好好活下去！不能放气！让别人看到我这么有本事而妒忌我! 让别人知到我比以前更快乐，事业也很成功，过得也比别人好很多倍!

Thanks Uncle William! I'll remember that next time when you come, I'll treat you to a better place, instead of a bowl of $6 prawn noodles at the hawker centre. :)

Moist cupcakes with vanilla buttercream frosting

I decided to make these cupcakes..but didnt take any pictures. Haha. Too lazy.

I think they are a little too oily, maybe that is why it is called moist cupcake..

Cupcake

Ingredients:

1.5 cups flour
2/3 cup sugar
1 tsp baking soda
1 tsp salt
1 cup water/milk
0.5 cup butter (softened)
0.5 tsp vanilla

1. Mix all ingredients well. It should be smooth.
2. Bake at 176 degree C for 15 minutes.
3. Cool completely before frosting them.

Vanilla buttercream frosting

Ingredients:

1/4 cup unsalted butter, room temperature
2 cups icing sugar
a ittle milk at room temperature, if needed (used for thinning)
0.5 tsp vanilla extract

1. Mix butter till smooth and creamy, and abit pale in colour.
2. Add 1 cup of sugar, the milk and vanilla. Mix on low speed.
3. Add 1 more cup of sugar. Mix till light and fluffy.
4. Lastly, place all the frosting in a piping bag, and frost the cupcakes! :)

Songwriting

Everyday I remind and tell myself: My dream is to be a songwriter and get my song published! :D :D
(One day, it'll come true! Because I have been so hardworking and I pesevere on.)
Or even better... If I'm able to improve my singing by a 1000 times, I want to be a singer-songwriter so that I can write my own songs, sing them, and puclish them!

I have been practising singing and playing all the songs with my keyboard..not sure if I did improve..but my singing defintely has to be improved by alot, together with the body movement to add an extra touch to the song, so that I'll not look like a log playing the keyboard. But it's kind of hard for me to move to the beat while singing and playing, with the right foot stepping and releasing the pedal high enough at the right moment. But I did promise my teacher last week that I'll try! So I really need to MAKE SURE I do it, because he has been telling me this every week, but yet I'm still lacking this body movement. Need to get it right during tomorrow's lesson! Cos I don't want him to lose hope and give up on me! :(

Another big problem is that I need to sing even louder with more feelings! My teacher has also been saying this every week! :( I tried but sometimes it's because of the nervousness that I couldn't sing louder, but at other times when I'm a little comfortable, I still couldn't get my voice to increase it's volume! So irritating! :(

Dad says more practise and it might not be perfect, but at the least, it'll definitely be better. Sooo.. I practise everyday! And my throat is getting sore sometimes. -___- So much for the practising.

Anyways.. I have finished writing my 1st ballad song last month, with the changes that my teacher made, and I'm now cracking my brain trying to complete filling in the appropriate lyrics. Actually I've been thinking of the lyrics for 2 weeks alr. LOL. But at least I got half of the lyrics today, and I'm left with the chorus part only. By the way, this 1st song of mine is written for Miu Miu! :D :D
How fortunate is he!

My 2nd task was to write an R&B song, which was supposed to be played last week, but I think my teacher forgot so that's why I wasn't asked to play. Anyway I'm very sure I will rewrite my song again, for the 5th time! Because I'm a perfectionist, I need it to be perfect before I present it to my teacher! Don't want him to hear my terrible music, because it would be a waste of time, and it just shows that I don't have that much talent to be a songwriter.
:) So, only perfect songs will go out.

Miu Miu

Miu Miu keeps seeing the vet these days.. :'( :'( (Spent about $400 plus alr I think??)
Cos of the breathing problem.
I have been feeding him antibiotics twice daily.. But he's still not cured. Now, his problem is like an on and off thing everyday. Even bought him the nebuliser (about $160, not including medicine) for him to breathe in the medicated vapour. I have to put him inside a box sealed tight, with the nebuliser tip inside for him to breathe. Have to do so 4 times a day for a month. But still, it's useless.
Vet had said before that if he still continues, then will have to go for x-ray to see where's the problem. And usually, for things like this, an x-ray will lead to an operation right? *touchwood*!
But guinea pigs may just die in an operation, because they of GA (general anesthesia). Because unlike dogs and cats, they are small in size, so it's very dangerous, and might just never wake up. :'(

He still seems pretty active, with the throwing the ball and all. By the way, during these 1-2 months, I have thought him a few tricks. One is to stand on hind legs when I say "stand". The second one is to turn a clockwise circle when i say "Miu Miu, circle."
The third one is taught recently. I bought him a ball with a bell inside. It's actually a cat toy, but he likes it alot after I taught him how to play. Just in case you don't know, Miu Miu has to be taught on how to play with toys, and also to train him to do his big and small businesses in the litter pan. If you just throw the toy there, he won't touch it.

So the moment I put the ball inside his home, I kept on shaking it, to make it seem really fun.
Then i tried getting him to hold the ball with his teeth. It wasn't easy at the first, and I remembered wanting to give up. When I was about to walk away, telling myself "Forget it. He really doesn't know how to play with any toys. (Because I gave him a soft toy moo moo cow, and a tennis ball, but he doesn't even touch them when I see people's guinea pigs love playing with these.)", I heard a soft sound of the bell ringing and the ball dropping on the ground.
I was so happy because this means that he did bite the ball and let go.
I turned around, and gave him the ball and told him to do again. But he just laid there... -___-

So I kept pestering him to do again. I got ready a piece of fruit and kept trying to make him grab the ball, and finally he picked it up with his teeth, and I gave him the fruit as a reward immediately! :D :D
I was so so so so happy!!
After that, I just kept practising with him, and he succeeded! :) :)

And for the next few days, or is it weeks?? Throughout the day, I keep hearing the ringing of the bell inside, and the sound of the ball hitting the ground. LOL!
He now uses it to get my attention!
Whenever I smells that I'm eating food, or there's my food or his food nearby, or he wants me, he'll keep tossing the ball in the air. Soo cute! (But slightly annoying at times, but nah, I don't mind! HAHA! Because he's my everything!)
If I'm eating fruits, I will always share with him, and he'll keep tossing the ball and standing realy really tall and straight to look at me, trying to say that he wants more!! :D :D :D

By the way, I teach him English, so he kind of understands what I'm telling him sometimes. He's such a baby! Whenever I carry him like a baby and hug him tight, he will look up at me. :D
And when he's outside or I'm carrying him, he will bite my hand, fingers, or arm, to tell me wants to go to the toilet. So I'll put him back. :D

I have also been growing wheat grass from organic wheat grass seeds for him to eat. It's pretty long now. Harvested some for him to eat just now. He loves them loads! :D

My laptop spoil alr. Kept giving me yellow lines at first. Then, it cant go to the desktop when I restart it. After that it became worse. Gave me screens with yellow lines and then a blue error screen. It auto restart again and again non-stop.. Need to get another one.

Miu Miu's 2nd trip to the vet

Brought Miu Miu to the vet for a review. Doctor said his fever has gone alr. It's 39.?? degree Celcius today. :)
Most of the water in his lungs has disappeared too, which is a very good thing! And he's really happy for him! You can see from his expression. He kept saying Miu Miu is really lucky! :D :D
His weight was 500++ grams today, and the doctor was happy that he gained weight. Increased about 60 grams over 1 week. :D

Yay for Miu Miu!

Btw, he was whining (just like last week)when the doctor took his temperature using the ear thermometer. LOL. And he told him in Mandarin to not pretend to cry. HAHA! Aww.. *laughs at dumbo Miu Miu*
And when his assistant held him and pulled his fur tight because the doctor had to apply medicine to his skin, Miu Miu was whining. lol. But it did look a little painful though. It's like people tying your hair too tight. Anw, the medication is to treat his fur mites, which should be inherited from his parent(s).
We were told not to touch his fur at the back for 5 days, orelse our hands will wipe off the medication. Seems like a difficult task.

So, he was given probiotics capsule which will help his digestion. The function is kind of similar to the yakult we drink. And there's another medication which is a cream for us to rub at his soles, because they are kind of a little swollen and red. Doc said it's because of his hard floor that he's walking on, but I think it's more likely because he keeps jumping around on the hard floor.

In conclusion, I can say that he's a really nice doctor! :D

Another review in 1 month, for his 2nd and last fur mites treatment.

And not forgetting my piano too! With my wonderful teacher suporting me..she never fails to say jiayou to me before I leave. :) Makes me feel good. :) *Actually it's because she's worried that I'll fail this coming exam, that's y.. :X *
But oh well, I'll really try my best! I want to do my diploma asap, then can learn difficult songs. :D

Miu Miu's sick

Brought Miu Miu to the vet. :'( He might be having lung infection, thus the respiratory problem. There's water in his lungs. He was crying when the vet gave him the injection. Plus we have to feed a few diff kinds of medicine. All these cost a bomb...$156.... Hope that he gets well, because his condition is pretty bad.

And we did a test for fur mites, and it's positive. I got to view the mites under the microscope. Eww! It clings to my Miu Miu's fur!

Have to call the vet tml, to update him about his condition. If he doesn't gets better within 3-5 days, will have to bring him to hospital and also for xray. :'(

Vet told us to be mentally prepared, because guinea pig's condition deteriorates very fast if they are sick.

Really pray he'll get well soon.

Ate the new product - Chocomelts - at Macs just now. I had the 'voucher' so it's buy 1 get 1 free, which costs $2.80 each. :) Yummy! I don't like chocolates, but I think this taste good together. There's the warm chocolate sauce on top.

My first songwriting music composition class

Had my first lesson today! I had individual class btw, rather than group, becuase I just prefer it quieter. Haha!
It's really super awesomeee! Damn cool to the max!
My teacher can sing so infinity well..such that I immediately felt the emotions and the it's like the whole atmosphere changed. It's really indescribable!
Like omg! I felt as if he's like the actors from those idol dramas. Feels really really reallyyyy surreal!!
He shall be my idol from now on! :D

I felt kind of embarrassed every time after he finished singing, because I will still be so into the song and his voice, which means I'm still in the omg-is-this-real kind of face. Then he'll be looking at me, which makes my mind snaps back. lol.

He has written songs for many singers such as Jolin, Na Ying, etc etc... He has his own EP ( a mini album) also! I want to be just like him!!

I'm going to improve myself and keep practising my singing and playing.. (ESP SINGING! Because I cant sing!)

Practised the chords during class today. It's very easy for me actually, but maybe because I was still in the omg mood I didn't play well in class. We used keyboard instead of the piano, because this course touches on chinese pop songs. The first few months is for me to get used to singing and playing together, and some time later, I will learn to compose my own chinese pop song!

Today's homework is to practise playing 天空 by Jolin (on my piano, because I dont have a keyboard), and also to practise singing it. Next week he will be listening to me, singing the song.. :S :S

My singing is really bad! Cant describe how bad it is. Think he'll be so disappointed. lol. I got a small vocal range... :( And my voice isn't clear.. maybe because I'm always shouting and all. And recently I've been scolding classes so hard (but yet I still cant hear myself since the class is too noisy) that I think I damaged my throat.
Poor me.

BUT BUT BUT... nevermind! I will still do my best! And the course is even more expensive than my piano! Plus it's so far away! An hour of travelling times two will be 2 hours of travelling.

Ok la, it's not all about the money. Haha.. I really really really like the lesson! It's a good time for me to come out of my comfort zone and do something which I always dont have the courage to. If all goes well, and IF im talented enough, I will want to write and sing my songs, go everywhere to perform, or even sell them to record companies. :) This has been my dream since last year!! But it's only now that I have the courage to learn. I'm going to overcome my fear of singing. During piano lessons, I always have to sing the notes, but everytime, I either sing it so inaudibly, or just keep quiet. I also didnt dare to go Kbox with my class, because of two reasons. One is of course it's expensive (like duh, u waste money to go there sing, when u can spend it on better things, besides they always up the volume so loud, it's bad for the ears). Second, it is because I didn't dare to. I only went for Kbox once. Was kind of forced to.

Suddenly, I see a glimpse of hope that I'm a tiny step closer to my dream. Haha! At least I dare to dream right?? :D

Guinea Pig - Miu Miu

Adopted a 5 months old male guinea pig today!! Like finally!!
He is a Sheba Mini Yak breed, which is actually an Australian breed, so he has many rosettes fur patterns all over. Thus, making him look really messy. Sheba Mini Yak breed seems to be a cross between an Abyssinian and a Peruvian.

Mine has a black head and white body. (Just like Coco.) Black beady eyes, but when I take a snap shot of him with flash, his eyes turn out red. :(
His name is called Miu Miu. Dont ask me why. Haha. Actually I was thinking if it's a female, it'll be Niu Niu..but he happens to be a male, and I couldn't think of any, so might as well change the 'n' to 'm'.
Miu Miu's very shy and timid actually. And he likes it when I stroke him, because he'll make the soft 'purr' sound just like a cat. :D Bought timothy hay, metal ball to contain the timothy hay, and 2 packets of Vitakraft food menu for him after that. Spent $31.

I'll soon be looking for a male friend for him so he wont be lonely. :D

Sugar Cookies

Ingredients

• 2 3/4 cups all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1 cup butter, completely softened
• 1 1/2 cups white sugar
• 1 egg
• 2 teaspoon vanilla extract

Directions:

1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.

2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients.

(I wrapped the dough in plastic wrap and chilled it in the fridge for about an hour.)

3. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets. (Instead of this step, I took it out from the fridge and rolled the dough out to your desired thickness, since after chilling, it is abit harder. Remember to flour the surface of the table and rolling pin too. This will allow easier rolling of the dough. After that, I used my flower cookie cutter to cut the pieces out. Place them on cookie sheet.)

4. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Really easy to make! I had 167 flower-shaped cookies in the end!! -__- So if you don't want this many, you have to either half all the ingredients, or divide by 4 for an even smaller portion.

The cookies were sweet, since they're called sugar cookies, but not too sweet, because I cut down on sugar. Everytime when I bake cakes or cookies, I'll cut down on the butter and sugar, to make it healthier! :D Yay for healthy lifestyle!

Anyway, children (like me! :D) will tend to like these cookies, since they are sweet. And usually people will like to dip them in chocolate or frost them with beautiful coloured icing patterns or designs. Some will even draw cartoon characters on them. Perfect for Christmas!

Butter Cookies

Ingredients:
2 cups all-purpose flour
1 cup unsalted butter
3/4 cup granulated sugar
1/4 teaspoon salt
1 1/2 teaspoons vanilla
1 large egg yolk

Directions:

• Mix butter, sugar, salt and vanilla in large bowl until smooth and creamy.
• Mix in the egg yolk until well blended. incorporated, scraping down the sides of the bowl at least once.
• Add the flour and mix lightly.
• Place dough on lightly floured surface and knead a few times. Just until dough looks smooth.
• Place dough on cling wrap and roll into a log shape.
• Refrigerate for 2 hours.
• Slice the dough into slices about 1/8" thick and place them on cookie sheets about one inch apart.
• This dough is also great for cutting into fun shapes with cookie cutters.
• Bake at 325F for about 15 minutes or just until lightly golden around edges.
• Cool for 5 minutes before transferring to wire rack to cool completely.

Nice, yummy butter cookies.. However, it's a little too oily I think, even when I did cut down on the butter. Also, the dough is really soft and too oily, which makes it unable to be rolled out. BUT they really did taste good!

The funny odd shapes of the cookies were due to the inability for the dough to be rolled out, hence, a cookie cutter could not be used. I made small balls, okay, not really small, and pressed them flat with my fingers before placing on the cookie sheet.

BUT BUT BUT the most important thing is......my brother likes this!! :D

The Royal Wedding of Prince William and Catherine Middleton

Watched The Royal Wedding which was broadcasted live on Channel 5 earlier on, from 3pm to around 8.45pm (Singapore time).

They had two kisses at the balcony of Buckingham Palace , instead of 1, after they had exchanged their vows. :D

It was a really really massive crowd of at least million, lining the streets to watch the royal wedding possession.
After leaving, the couple sat on the horse carriage thing, that looked just like how it was in fairytales.

The bride was looking so gorgeous with her beautifully designed wedding dress, as well as the Prince who looked really dashing in his "famous scarlet tunic of The Irish Guards". Banana Cupcakes

1 c. butter
1 c. sugar

1 beaten egg
1 c. mashed bananas

Sift together, then add to first mixture and beat well.

1 1/2 c. flour
1 tsp. baking soda
1/8 tsp. salt
1 tsp. vanilla

Fill greased cupcake tins 2/3 full of batter. Bake at 400 degrees for 15 to 20 minutes. Makes 14 large cupcakes. Frost with powdered sugar icing, top with chopped nuts.

FROSTING:
2 c. powdered sugar
1/4 c. softened butter
2 tbsp. cream
1 tsp. vanilla

I didn't do the frosting, because without the frosting, they tasted really nice. Love the banana smell.

I changed the recipe abit, because I didn't want all the banana to be mashed, so I left some in small chunks and added them in after that. Think it tasted better this way.

Vanilla Cupcakes

Vanilla Cupcake Ingredients:
1/2 cup (113 grams) unsalted butter, room temperature
2/3 cup (130 grams) granulated white sugar
3 large eggs
1 teaspoon pure vanilla extract
Zest of 1 large lemon (outer yellow skin)(I didn't use this.)
1 1/2 cups (195 grams) all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup (60 ml) milk

Instructions:
Preheat oven to 350 degrees F (177 degrees C) and line 12 muffin cups with paper liners.

In the bowl of your electric mixer, or with a hand mixer, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract and lemon zest.

In a separate bowl whisk together the flour, baking powder, and salt.

With the mixer on low speed, alternately add the flour mixture and milk, in three additions, beginning and ending with the flour. Scrape down the sides of the bowl as needed.

Evenly fill the muffin cups with the batter and bake for about 17 - 20 minutes or just until set and a toothpick inserted into a cupcake comes out clean. (Do not over bake or the cupcakes will be dry.)

Remove from oven and place on a wire rack to cool.

Once the cupcakes have completely cooled, frost with icing.

If you want flat topped cupcakes then slice off the dome of each cupcake, with a sharp knife, before frosting.

Cupcakes are best eaten the same day they are made, but they can be covered and stored for a few days.

Buttercream frosting ingredients:
2 cups (230 grams) confectioners sugar (icing or powdered sugar), sifted
1/2 cup (113 grams) unsalted butter, room temperature
1 teaspoon pure vanilla extract
2 tablespoons milk or light cream
Assorted food colors (if desired) (I added Apple Green colouring)

Buttercream Frosting:

In an electric mixer, or with a hand mixer, cream the butter until smooth and well blended.

Add the vanilla extract.

With the mixer on low speed, gradually beat in the sugar. Scrape down the sides of the bowl.

Add the milk and beat on high speed until frosting is light and fluffy (about 3-4 minutes).

Add a little more milk or sugar, if needed.

Tint the frosting with desired food color (I use the paste food coloring that is available at cake decorating stores and party stores).

Makes about 12 normal size cupcakes. But I made small cupcakes instead, so I have more. And I also half all the ingredients, since I dont want too many cupcakes.

After I added the frosting.. They look ugly. I know. But I dont have a proper piping equipment.

The frosting looks like it's melting. So after that, I put the cupcakes in the fridge, and a few hours later when I took them out, the frosting had turned hard! :D And it's more yummy too. By the way, I added more sugar than stated in the recipe because it didnt mention too have the frosting texture. Think it's because of the weather. So, it tasted a little too sweet. However, after taking it out from the fridge, the sweetness was alright.

I love clay figurines, and I happened to find a tutorial on how to do these 2 characters. So I tried making them with my mum's help. It was tiring, and lots of patience was needed. My favourite among these is Alice, because she's really cute.

This was supposed to be Ariel from The Little Mermaid but I changed the face colour to yellow, because there wasn't enough cream colour.

The one below is Alice from Alice in Wonderland.

Coco was sleeping on my sofa, with the cushion as his pillow. He was initially sleeping on my palm, and he moved to my lap afterwards, and eventually crawled to this part of the sofa himself! So i had to give up my seat for him, just in case I accidentally squashed him with my backside. I remembered we were going down for lunch, and I kept calling him to wake up, but he didn't want to wake up. So had to leave him here, till we came back.... and he was still sleeping there. LOL! But he woke up after we open the door and stepped ino the house. He gave us the very stunned look, and froze there.

My fingers were numb because Coco had been sleeping like that for same time, even when I was walking around. So I sat down to use my computer while he continued sleeping.

By the way, in the morning, it is much easier to make him sleep on my hand as it's his sleeping time. I just have to keep patting him, and talk to him softly, and he'll snuggle up and fall asleep.

French Macarons failure

I tried making macarons today. But they were a TOTAL FAILURE! Nowhere near it. lol. -_-
And I don't really know what's wrong.

These were the ingredients I added:
50g egg white
65g almond powder (supposedly almond meal)
80g icing sugar
40g sugar (supposedly castor sugar)

This is what the recipe that I found says..
1. Blitz almond meal and icing sugar in a food processor.
2. Beat the egg whites on a medium speed until medium peaks form. Graually add castor sugar and beat until stiff peaks form.
3. Sprinkle half of the dry ingredients over the egg whites and fod in with a spatula. Fold in remaining dry ingredients. This is also when you would add food colourings.
4. When done, you should be able to make a ribbon on top that takes at least 30 seconds to disappear.
5. Prep baking trays and spoon batter into the piping bag with a 1cm wide nozzle.
6. Holding the nozzle close to the baking paper, pipe your macarons about 4cm apart. Try to make them round and flat.
7. Tap the tray on a flat surface to get rid of excess bubbles.
8. Preheat the oven to either 120 degree C(baking time: 20 minutes) or 180 degree C (baking time: 9 minutes).
9. Rest the shells after piping for at least half an hour in a dry place.
10. Bake for 18-20 minutes in the middle shelf. If doing more than one tray, bake one tray at a time.
11. Remove baking paper from tray and cool on a wire rack. Gently remove macaron shells from baking paper and continue cooling face up on the wire rack.
12. Refrigerate in an air-tight container for at least 1 day before filling.

My batter was kind of a little too watery, and I dont know why. Think might be because my egg whites were not beaten long enough??? And while typing the steps out, I realise that I left out step 9. So they were baked like almost straight away after piping.

So, after baking, when I took the tray out, they were still about a certain height, though none looked like what they were supposed to. But after I wash my hands, and turned back, to my horror, all of them sank!! They were as flat as a piece of paper. Not kidding!
I tried removing them from the baking sheet, but none could be removed because the paper will be stuck to the thing too.
Tried eating a tiny bit, and they weren't edible, because it tastes like cotten candy, except a harder and much much more stickier version. -__-

In the end, I didn't get the chance to do the filling in the middle, because there wasn't a need to already. :(

But anyway, here's the recipe for the butter cream frosting that I've found:

- 4oz egg whites
- 8oz sugar
- 8oz butter, room temerature

Combine egg whites and sugar in a mixing bowl. Whisk constantly over a gently simmering hot water bath until 140 degree F is reached. Remove from heat. Place on mixer with whisk and whip until stiff. Turn down whip speed to 3rd and whip until cool to the touch (this takes a while - should be cooler than your hand). Change to a paddle and gradually add soft butter by table spoon pieces. Mix to emulsify. Once desired consistency has been reached, add desired flavouring and mix well.
Makes about 3 cups.

Piped them on baking sheet..But because of the too watery texture, it couldnt appear round. After a few seconds, a few 'circles' started joining 'hand-in-hand' to form a long stream.

Ban Chang Kuih 曼煎糕

Decided to try making Ban Chang Kuih today. Just in case you are wondering what it is, it is a chinese pancake filled with roasted peanuts, cream corn and sugar

Here's a picture of how it should look like.
Love eating this. But I don't like the peanuts though, so if they were to change to things like cream corn and cheese and etc.. I will like it muh more.

Ingredients:
Batter:
25g rice flour
50g plain flour
1/2 tsp bicarbonate soda
25g sugar
pinch of salt
25ml thick coconut milk (I think you can use milk as a substitute too)
50ml water
oil for greasing pan (I used butter instead, because I think it'll make the pancake smell nicer. And I don't have the pancake pan, so I used the normal pan for stir-frying stuffs.)

Filling:
1/2 cup castor sugar (I used normal sugar because I didn't have this.)
1/2 cup roasted peanuts (finely ground) (Omitted this ingredient, since I don't like peanuts, and I don't have either.)
1/2 cup margarine
1/2 cup cream corn (optional) (But I happened to have this can of cream corn that has been opened, because my sister has been practising for her Home Economics practical with this for days.)
Cheese slices (ADDED ON MY OWN :))

Method:

1. Sift flours and bicarbonate soda. In a mixing bowl, add sugar and salt.
2. Whisk in the coconut milk and water. Stir to make a smooth batter.
3. Rest batter for about 30 minutes, cover with a damp tea cloth. (I was impatient, so I decided to wait for only 5 minutes. And I told myself, "Hey, for a busy person like me, it's very good that I could wait for 5 minutes." LOL.) Alternatively you can also leave it overnight in hte fridge.
4. Lightly grease the pancake pan over low fire. Ladle the batter to pan to form a thin layr. Cover and cook for 10 minutes over slow flame.
5. Sprinkle a tablespoon of sugar, roasted peanuts and cover for about 10 seconds. The sides would have been a little browned at the edges.
6. Drop a dollop of margarine onto the pancake and let it melt. Add cream corn and remove the pancake from the pan. (As for me, I added half a cheese slice to some of the pancakes instead of cream corn for all.)
7. Fold it in half immediately. Serve hot.

Results....
I love the cheese one alot! :D :D

I didn't manage to try the cream corn ones.
However, as for the pancake itself, it was crispy, but I could not deny that it was not bitter. Feels a little like some fried wanton skin which has a slight bitter taste to it. If I'm not wrong, it is because there's is too much bicarbonate soda.
But because the cheese tasted sooooo nice, the taste overwhelmed the bitter taste by a bit. :)
So anyway, since there was no pancake pan to use, the pancake was thin everywhere, which does not look very like the originl, which was supposed to be fluffy in the middle, and crispy at the sides.

Koizora - Japanese movie/drama

I finished watching Koizora today. The movie version was better.
The story was fantastic!
It's a Japanese show and genre was teen love kind of thing.
Hiro is like to be like the river whereby it is always so strong.
A really sad romance. According to the comments of the viewers..Many cried so hard especially at the endiing.

The plot: (adapted from Wikipedia)

Mika Tahara has just started high school and yearns to fall in love. However, to her dismay, a gal-like boy in her grade, Nozomu, acquires her cell phone number and begins to make frequent calls. When summer vacation starts, one day, Nozomu drunkenly phones her, but Hiro confiscates the phone and converses with her instead. Although Mika does not know who Hiro is, she feels at ease at the sound of his voice and the two befriend each other.

Mika and Hiro agree to meet each other when school starts, and to Mika's shock, Hiro turns out to be the delinquent boy she is afraid of. However, as she understands how gentle he is, they began to fall in love with each other and face a multitude of challenges threatening their relationship, such as Hiro's ex-girlfriend Saki hiring a group of men to rape Mika and continuing to harass her over the phone. Despite these events, Hiro vows to protect Mika, and she begins to compare him to the sky. An unplanned pregnancy occurs when Mika and Hiro consummate in the school library, and although they are determined to start a family together, a miscarriage brings tragedy to them both.

Chocolate Fudge Cake

Baked Chocolate Fudge Cake from this pre-mix pack today.

This is how the pack looked like.

Before baking....

Didn't show the results..because it was a terrible failure. The cake was overflowing after 25 minutes of baking. Cake tin was too small, and also I went to poke with wooden chopsticks to check if it's done, which resulted in a bigger hole compared to using toothpicks. The middle portion which was not yet cooked, and was still in liquid form flowed out from the hole.. -__-

For the next 20 minutes or so.. I was busy saving it, preventing the contents from overflowing out of the tin.
In the end, the top portion was getting burnt, but the middle portion was still liquid. So I had to cut the top portion out and continued with baking the uncooked parts.

And it didnt taste nice. I think it wasn't sweet enough, but this isn't my mistake, because I was only told to add eggs, water and oil.

Teaching abacus to kindergarten kids

Taught abacus at a kindergarten today. I was there to be the teacher's assistant.

The kids are soooo young.. 4-6 years only! The class' standard is pretty bad. But there were a few who stand out. :)
So amazed by their learning ability. They can concentrate and do really well without moving about or talking. Just sit there and do their questions quietly, and they will ask immediately whenever they don't know. When they asked me questions, they were really nice too. Not like some kids who will be shouting "Teacher teacher!!!! I don't know!"

But there was one boy who kept playing with his abacus and all. And told me things like "Teacher, my feet pain. Can I kiss my feet?". Then, the next moment, you see him taking out his slipper, and bring his foot to the table. -___-
I remembered he aso told me out of the blue while I'm teaching other, "Teacher, I said f*** just now. My brother say cannot say f***." -____-"'

Alot of wierd people out there. lol..

Though it's my first lesson with them only, I've managed to gain some achievemnet. Two girls were telling their classmates to come and ask me question when they don't know, because they said I'm good. They were like "This teacher very good. Go ask her." Because I thought them once, and they will understand already. :) :)

Then there's another boy..he wanted to ask the teacher, but she was busy so she told him to ask me.
After I taught him, he told the teacher that when I teach him only once, he can understand already. The teacher was like, "Wah, so clever." lol.

Time passed really fast, and before I knew it, lesson end already. However it was pretty tiring, cos I need to keep kneeling on the floor most of the time, as their tables and chairs are soooo low.

I can graduate from polytechnic after 3 years!

Doggies!!!! Wish Ah Ben was mine..

Had a really fun day over at my 四舅's house yesterday!!! Awesome!

We had lunch and dinner there. The day food was yummy!
And there's my favourite ABACUS SEEDS too!

Anyway, it was the first time I ever carried or played with dogs before!
I wish that everyday can be like that.

The story went like this...
Their neighbour has 3 dogs, Ah Ben, Angel, and one more I don't know the name (but let's call it Blackie, since it's mostly black).
Anyway, while my relatives were cooking lunch, since our door was left wide opened, Angel and Blackie ran into our house. Lol, I was so shocked that I kind of kept screaming.

Then their neighbour carried Ah Ben over, and let it roam around our house. Ah Ben was totally white in colour. If I'm not wrong, they are Shih Tzus.
She had to carry Ah Ben, because he did not dare to climb the few steps of stairs from their house to our house.
Heehee. So cute.

Ah Ben is a very very playful dog!
He kept standing up and asking for food, or just to play with you.
And he'll run around the house, from the kitchen to the living room, back and forth.

Angel on the other hand, doesn't like people to carry her. She'll growl and bite you if you attempt to do so. So, I could only pat her. Even her owner could not get her to shower without getting bitten.

Blackie was scared of me, because everytime I go near, it'll run away as fast as possible.

And you can guess it, Ah Ben was my favourite!!!!!

From afternoon till night, I treated it like as if he's my dog. LOL!
I kept carrying him around the house, playing with him, letting him sleep or rest on me, etc etc..

He loves to stand and ask for food when he sees people eating, unlike Angel who will faithfully sit there and look at you with the big beady eyes, and having the very pitiful expression, waiting to be fed.

There's once when Ah Ben wants to pee, because he kept on following while standing on the 2 hind legs, and using his paws to touch me, so I guess he must be wanting to pee, and I brought him back to their neighbour's house to pee.
And I taught him how to climb the stairs also.
Yay! Thanks to me, he can now climb the stairs already. =D =D
Feel happy for him.
But I think that his owner isn't very happy with me/us.
It's just my feeling. Maybe I kept playing with the dog so much. Like I brought him home, then later brought him back here, and brought him home again. Maybe it's because they didn't like how nice I treated the dog, when he wasn't mine?
I think Ah Ben likes me!
At around 8pm or so, they suddenly closed the door after all the dogs went back. And they even close their corridor windows! Hmph! That's why I think they are not too happy.
But they should thank me, since I taught Ah Ben how to climb the stairs.

I miss Ah Ben sooooo much!! <3

Oh boy, I really wish Ah Ben was mine. :'(

So envious of my uncle's family, because they can get to play with them almost everyday since the dogs will be running in and out. Even more envious of the dogs' owner, because they are the ones who take care of them.

Driving test PASS!!

I woke up at 6.50am, changed n ate breakfast before hurrying out. Had to reach the driving centre for warm-up lesson at 7.25am.
So after lesson, I waited in the waiting room for the tester to pick me up. The tester was nice. :) He even wished my gd luck. I felt so comfortable having the test. He even kind of laughed and said that I was really forgetful, cos he just told me to u-turn, and the nxt moment, I forgot and asked him whether it's right turn or u-turn. Lol. So after everything, he said im very good in circuit. :) and told me i was like to forget to on the signal. He also said I need to slow down earlier when approaching hazard so that I can change lane. That's all for my mistakes. 14 demerit points in total.
I FINALLY PASS MY DRIVING TEST this second time!!!! So glad! :D Done my licensing stuffs, and bought my pair of P plates. Licence will be mailed to me within a month.

Pregnant guppies saved from being dissected at the abdomen to 'squeeze' the premature baby fish out.

‎2 of 6 pregnant guppies were dissected alive at the abdomen to remove the eggs (baby guppies) to observe under microscope for my agrotechnology practical.
Poor guppies.
I was the one who adjusted the microscope for all to see, and being the first one to view them feels kind of great!
Saw their eyes, heartbeat & blood vessels.
I was also able to see the red line (blood in the blood vessel)beating up and down.
It was really a beautiful sight to know that even small guppies are that beautiful.
I love how Mother Nature created everything beautiful.. (except for some pests..like u-know-what). haha! Maybe Im just bias with them.

Anyway, the 2 dissected mummy guppies were swimming around but looking panicky. Wonder how long they can live. :'(

Actually my teacher planned it such that girls will do at least 1, and boys will do at least 1, and he demonstrate one to show us.

Luckily I (together with a few girls) managed to pester my teacher that we dont want to dissect the rest, so saved 4 guppies.
And I brought 2 home!
They have the snakeskin phenotype.

I'm so overjoyed that my brother helped me to update my phone, doing all the computer updating shit, just so that I can watch youtube videos.
Because initially my phone doesn't support youtube videos, but I went looking around the net to see if there's any way to solve this. And I found somebody mentioning about updating of the S/W thing. So I install my CD and all te stuffs to my computer but there were loads of problem, and I felt so irritated, and gave up.
However, my brother came and did all the shit and all...and there were conncection problems, but he still kept retrying. So after that, it was kind of okay already, but still not very good.

And finally, he tried watching the youtube videos to test out, and it really works! =D =D
Yay, thanks to my brother! I can now watch youtube on my phone, though it's not clear, but it's not really that blur either. =D

Happy new year people!!! Goodbye 2010.. It wasn't a good year at all..It was all shitty...The only good thing is that my results improved abit.

Welcome 2011..hopefully it'll be 10 times better!

For this year, I wish:

1. To achieve sth. For example, to get a job that I really really like, or if im studying, to get good results.

2. Everybody will be healthy and strong!

4. PASS my DRIVING on 12 Jan 2011!! Better dont get any crazy tester again.

5. Perhaps get in qualifying rounds for my piano competition on 23 Jan.

7. Improve on my GPA by alot in my exams at the end of February.

8. Graduate in March.

9. Get a job asap after I graduate.

10. Do well for both my piano grade 8 internal and external ABRSM practical exams.

11. Be an air stewardess. :P

I'm going to try and be an air stewardess after I graduate next yr! :D :D
Doesn't matter what airline it is.
Cos I went to see the height requirements, and it's 1.58m for females for all airlines. Though I'm ard 1.57m. But it's no harm trying right? Since the smile and confidence from an air stewardess is always the most important. And I'm sure I have those! :D :D

Im too excited.. LOL! I must be crazy. My bro was asking me yesterday why I'm so happy when I've not even go for the selection, not mentioning being selected for the job. And I told him, "因为有梦想就会有希望！"
Right right???
But I really really really and seriously want to try being an air stewardess for maybe 3 yrs or sth for the experience, since the pay is low.
I think this will be one of the things that I can be very proud of.

It sounds cool too, it's like if i walk around the airport wearing the uniform with my luaggage, heels, and neatly tied hair, and superb posture, I'll always be happy bt it.
Imagine if people asks me what's my job, and I can tell them I fly all around the world, but in MORE than 80 days! Heehee! :P :P

Ok la, it's second hand, and this person has used it for 1 yr 3 months.
But who cares right! Since it still looks nice, and I like it alot! :D
It's the LG KM900 aka LG arena.
There's wi-fi, 5MP camera and video recorder, cool looking user interface, and it seems very much like an iPhone. The only bad thing is that you cant stream youtube videos.

Anw, the camera is really awesome!!!!
You can take macro shots, u have the anti-shake thing, ISO, contrast, face detection, auto-focus, and other usual effects and functions..
